Influence of Chlorophyll , Internal Ethylene , and PAL on anthocyanin sythesis in ¢¥ Fuji ¢¥ Apple


Abstract
Anthocyanin content was higher and chlorophyll content was lower in the bagged ¢¥Fuji¢¥ apples than in the unbagged ones. However, the metabolism of anthocyanin synthesis did not necessarily affect that of chlorophyll because high chlorophyll content was also found in anthocyanin-rich apple fruit. The red color of fruit skin was dark in unbagged apples because of mixed color effect with high content of chlorophyll. The content of internal ethylene and phenylalanine ammonia-lyase activity were increased during maturation showing no relation to anthocyanin content. Soluble solids content (SSC) increased during maturation and then decreased at the late stage. The content was highest at the fruits of outside canopy, but there was no relation between SSC and anthocyanin content.
